Brioche

 

Large 1 1/2 lb. Loaf

Place all the following ingredients in order into the breadmaker's pan with the exception of the raisins.

  • 1/2 Cup of milk

  • 3 eggs

  • 1/2 teaspoon of vanilla

  • 1/2 Cup of butter

  • 1/4 Cup of sugar

  • 1 1/2 teaspoons of salt

  • 1 teaspoon of cinnamon

  • 1/4 teaspoon of nutmeg

  • 500 g. or 3 1/2 Cups of flour

  • 1 1/2 teaspoons of instant yeast

  • 3/4 Cup of raisins

Set the program for sweet bread or raisin bread (or whole grain or basic white if your machine has neither of previous cycles). If programmed for the raisin cycle add the raisins at the beep. I f using another cycle, add the raisins abouit 5 minutes before the end of the second kneading cycle.

Check the dough after 10 to 15 minutes of kneading; it should have formed a smooth ball, a bit soft but not sticky. If necessary, adjust the dough's consistency with additional flour or water.
