Charuwan's Thai Salad

The original instructions for this are very vague, hence it goes more by taste.  

I have managed to get a copy of the recipe I wrote out for Chuck Hamilton many years ago, so here goes:

1 1/2 >2 Cups of Cabbage, finely sliced

1/2 Cup of peanuts, finely chopped

1/4 Cup of dried shrimp

1>1 1/2 Cups of green beans, finely chopped

3 tomatoes, finely diced

3 cloves of garlic, crushed

1 tbsp. of lemon juice

1 tsp. of sugar (or palm sugar)

1 tbsp. of Fish Sauce

1/4 tsp. shrimp paste

1>2 chillies, finely chopped

toss all ingrdients and allow to sit in fridge for a period of time before serving. The proportions of sugar/fish sauce and lemon juice are variable to taste. The original Thai version of this is either a green papaya or green mango salad and is usually mashed in a Thai mortar and pestle. Enjoy!
