Chocolate Amaretto Cheesecake

  • Crust:
    1 ¼ cups of chocolate wafer crumbs or 1 cup of graham wafer crumbs or 1 pack of butternut crunch cookies, crumbed
  • ¼ cup of cocoa
    2 Tbsp. Sugar (if using cookies this can be left out)
    ¼ cup of melted butter

  • Filling:
    16 oz. Cream cheese (2 packs)
    ½ tsp. Almond extract
  • ½ cup sugar
    1 tsp. Vanilla
  • 2 large eggs
    1/3 cup of Amaretto
  • 250 g. Semisweet chocolate, melted and cooled
    2/3 cup sour cream
  • Combine crumbs, sugar and melted butter and press into bottom and halfway up the sides of a greased 20 cm. springform pan. Chill while making filling.

    Beat cream cheese until smooth. Beat in sugar gradually. Beat in eggs one at a time at low speed. Add cooled chocolate, flavourings, amaretto and sour cream. Beat at low speed until thoroughly blended then pour into prepared pan.

    Bake at 150 degrees for 1 hour. Turn off heat and leave cake in the oven for 1 hour longer. Cool pan at room temperature, then chill for at least 24 hours in refridgerator.

    For topping, melt chocolate with shortening and spread over top of cake.
