Lynda's Laksa

Ingredients:

2 Tbsp oil
1 onion , chopped
1 clove of garlic, chopped
2 chicken breast fillets, diced
2 Tbsp of chopped chili
1 Tbsp of ground coriander
1 Tbsp of ground turmeric
6 cups of water
6 tsp of stock powder
2 cups of milk
400 ml of coconut milk
250 grams of rice vermicelli noodles
220 grams of can of bean sprouts (optional)


Instructions:

Lightly sauté onion and garlic in oil, add chicken and cook slightly on outside. Add chilli and other spices and continue to sauté lightly. Then add water, stock and simmer for 2-3 minutes.
Then add milk and coconut milk continuing to simmer for 6 minutes without lid and stirring constantly. Add vermicelli noodles and simmer for a further 5 minutes.
gobble up ... Yum! Yum! Yum!


Note: We have found adding a quarter of a pack of vermicelli noodles and half a pack of Hokkien noodles to be a nice combination, along with some bok choy.
