Grandma Elford's recipe

Oatmeal Cake

Ingredients:

1 1/4 cup of boiling water

1 teaspoon of vanilla

1 cup of quick cooking oats

1 teaspoon of cinnamon

1/4 cup of butter

1 teaspoon of nutmeg

2 eggs

1 teaspoon of baking soda

1 1/3 cups of flour

1/2 teaspoon of salt

1 cup of brown sugar

1 cup of white sugar

Instructions:

Pour boiling water over oats and combine with buttr. Let stand and cool for 20 minutes.

In a bowl mix eggs, white and brown sugars. Add oatmeal mixture, flour, salt, soda, cinnamon, nutmeg and vanilla.

You may optionally add dates, raisins or nuts.

Bake at 350 F / 180 C in a square or oblong tray for approximately 1 hour and twenty minutes.

(Optional Frosting - thick)

1/4 cup of canned milk

1/4 cup of buter

1/2 cup of brown sugar

1 cup of dissicated coconut

Spread thickly on top of baked cake and place under broiler until golden brown
